Mascarpone Banana Pudding
From Dorothy McNett's recipes at www.dorothymcnett.com. Serve with fresh fruits or crispy cookies, if desired. Serves 6-8, it is rich so offer small servings!
1 cup mascarpone cheese
In batter bowl, using a whisk or electric beater, thoroughly whip up the mascarpone, adding the whipping cream and continue to beat or whisk until it is getting thickened a bit. Gradually add the sugar, vanilla and salt. Fold in the sliced bananas. Pile into individual serving dishes, sprinkle with dark chocolate. Refrigerate several hours if possible as it will firm up a bit more, but if you don't have time just go ahead and eat it! Splash with a bit of rum, if desired and serve with fruit slices or cookies.
