Blue Cheese Wine Biscuit Nibbles

From Dorothy McNett's recipes at Serve as an appetizer with wine, white or red! Makes about 48.

3 cups all purpose unbleached flour
1/2 cup hemp seeds
2 teaspoons baking powder
1/2 teaspoon semi-coarse sea salt
1/4 - 1/2 teaspoon freshly ground white peppercorns
1/2 cup unsalted butter, chilled
1 cup buttermilk
1/4 pound blue cheese, crumbled

Preheat oven to 425 degrees. In food processor with steel chopping blade in place, whirl the flour, hemp seeds, baking powder, salt and pepper to blend thoroughly. Cut the very cold butter into 4 pieces. Add to flour mixture and pulse several times to cut the butter into small pieces. Add the buttermilk and process just until all ingredients are nicely mixed. Line 2 baking sheets with silicone mats or parchment paper. With fingers, shape round flat pieces of the dough about 1 1/2 inches in diameter. Place on baking sheets, and with thumb make a center impression in each. Place a few good sized crumbles of the blue cheese into each. Bake 12-14 minutes, or until cheese has browned and biscuits are done. (Do not let the cheese burn.) Cool and serve!
