Curried Egg Appetizer

From Dorothy McNett's recipes at

2-3 hard cooked eggs (see recipe for cooking eggs!)
1-2 tablespoons extra virgin olive oil
1/4 teaspoon fine sea salt
1/2 teaspoon curry powder
soft butter, for spreading (optional)
thin slices of bread, or crispy rice crackers
grated carrot

First follow directions for hard-cooking the eggs and then allow to cool. Chop finely and add oil, salt and curry powder. Spread thin layer of butter on bread or crackers, and then top with egg mixture. Decorate with freshly grated carrot.
