Raspberry Jam and Cheese Appetizer

From Dorothy McNett's recipes at www.dorothymcnett.com. Never buy a small jar of jam again when you can make it is less then 10 minutes! Spread this over some hot pepper cheese for a fabulous snack or appetizer.

1 cup fresh raspberries
1 cup crystalline brown sugar

cheese slices, or Brie sprinkled with a little freshly ground pepper

Wash the berries and shake well to get most of the water out. Place berries and sugar in batter bowl. Microwave on high for 3 minutes. Stir well. Microwave another 3 - 4 minutes. Pour into jelly jars or other heat resistant cups. Makes about 1 cup of jam. It will firm up as it cools, and can be used as a cheese topping warm or cold. Or, just use it on toast just as it is, jam!
