Hoisin and Pork Tenderloin Stir Fry

1 pork tenderloin
1 tablespoon cornstarch
1/4 teaspoon fine sea salt
1/4 - 1/2 teaspoon paprika (I like the Smoked Paprika)
2 tablespoons peanut oil
1 medium onion, cut into small slivers
3-4 cloves garlic, slivered
1-2 teaspoons ginger root, slivered

2 tablespoons hoisin sauce
1/2 cup pistachio nuts or sunflower seeds
3 tablespoons soy sauce
1 teaspoon honey or crystalline brown sugar
1/4 teaspoon cayenne, if desired
1/4 teaspoon freshly ground peppercorns
1-2 bok choy, cut into slivers

Slice the tenderloin into 1/2 inch pieces, and then cut each into slivers. In bowl, combine cornstarch, salt and paprika and toss in the meat strips. Set aside.
Cut onion, garlic and ginger into slivers. Heat the oil in wok or stir fry pan and quickly add the slivered vegetables. Stir and fry several minutes. Add the seasoned pork strips and continue to cook and stir about 5 minutes, or until pork is done. Scoot it to the sides of the pan and to the center of the pan add the hoisin, nuts, soy sauce, brown sugar, cayenne, pepper and slivered bok choy. Cook and stir until the bok choy has wilted and flavors have blended. Stir everything together and serve!
