White Mushroom Appetizers

From Dorothy McNett's recipes at www.dorothymcnett.com. Interesting blending of flavors, and so delicious as a first course, paired with perhaps a White Zinfandel or Chenin Blanc, etc. It is written with open ended quantities, figure about 3 small mushrooms per person.

firm tofu, cut into small chunks
soy sauce
small white mushrooms
mayonnaise or other good flavorful sauce
fresh cilantro, finely minced
fresh green beans

Drain the tofu and cut into small cubes. Place in a bowl and pour several tablespoons of soy sauce over them, toss, and set aside about 1/2 hour or more for the tofu to absorb the flavors. Gently wash the mushrooms using a mushroom brush or paper towel. Remove stems. Spread a dollop of the mayonnaise into each cap and sprinkle with some cilantro. Fill with 2-3 cubes of the marinated tofu. Cut the green beans into small pieces and arrange over the tofu, tucking in to hold in place. Arrange caps on a microwave safe plate (a glass or ceramic devil egg plate is perfect!) Microwave, uncovered, using about 30 seconds per mushroom as a guide. (6 mushroom will take about 2 1/2 - 3 minutes, etc.) Allow to cool a bit and serve.
