Haitian Pikliz

From Dorothy McNett's recipes at www.dorothymcnett.com. From Haiti, this is a relish side-dish made up of spicy pickled vegetables. It is best marinating in the refrigerator for 1-2 days, so think ahead!

1/2 head cabbage, shredded
2-3 carrots, chopped or shredded
1 onion, sliced and chopped
2-6 hot peppers (Scotch bonnet, jalapeno, serrano...whatever you have)
6-8 cloves garlic, minced
1 1/2 teaspoons fine sea salt
1 teaspoon whole peppercorns
3 cups crystalline brown natural sugar
1-2 cups white vinegar, or enough to cover the vegetables

Shred, chop, dice as desired. Combine vegetables, salt, pepper and sugar in a 2 quart glass bowl or jar. (A jar is the usual container, and the pikliz would always be available.) Pour in enough vinegar to cover the vegetables, packing them down a bit. Refrigerate at least 1 day, and it can be kept 2-3 weeks, refrigerated.
