Lebanese Taratoor Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. Use this wonderful sauce with any baked or grilled fish or seafood, fried vegetables, etc. It is also one of the special ingredients in Baba Ghannooj. fabulous served with crab and fish from all over the world.

4 cloves garlic
1 cup tahini paste
3/4 cup cold water
1/2 cup lemon juice
1 teaspoon fine sea salt

Place the steel chopping blade into the food processor, turn it on and then drop the cloves of garlic into the running blades. This will mince them up finely. Now whirl in the tahini paste, 1/2 cup of the water, lemon juice and salt. Add the remaining water very slowly, drizzling it in, to make a thick sauce like mayonnaise. Use as a sauce with other foods, or as an ingredient in certain recipes such as Baba Ghannooj. Wonderful served with Alaskan King Crab, and other crabs and fish such as salmon.
