Orange Butter Cookies

From Dorothy McNett's recipes at

1/2 cup unsalted butter, room temperature
1/2 cup raw sugar
1 egg
zest of 1 orange or lemon
1 tablepoon orange juice or lemon juice
1-1/2 cups all purpose unbleached flour
1/4 teaspoon baking soda

Process butter, sugar, egg, and vanilla with steel blade in processor for 2 minutes. Add remaining ingredients and process just until dough is mixed and begins to form a ball around blades. Chill about 1/2 hour. Use about 1 teaspoon dough for each cookie, and shape into balls. Line plate with waxed paper. Arrange 9 cookies in a circle on the plate, about 2" apart. Elevate on rack. Microwave on High 2-3 minutes, or until dry and no longer doughy. Sprinkle with sugar.
