Burgers with Spiced Cherry "Catsup"

1 pound lean ground beef
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground pepper

1/2 medium onion, chopped
4-5 cloves garlic, minced
fresh cherries, chopped (about 1 cup chopped)
1 - 2 tablespoons butter or olive oil
1/2 teaspoon or more of prepared horseradish

mayonnaise
lettuce

Combine meat, salt and pepper. Form into 3-4 patties as neatly as possible, and push your thumb down into the center to make a small depression. Set aside while you make the cherry sauce. In a small fry pan, heat the butter or oil and then add the chopped onion, garlic and cherries. Cook and stir on medium to medium low heat for about 10 minutes, to cook and brown a bit. Stir in the horseradish. To cook the burgers, heat a large saute pan or a stove-top grill pan, adding just a drizzle of olive oil. Cook until done to your liking, do not press down on them with the spatula as that causes juices to escape. To serve, spread a very thin layer of mayonnaise on the buns, arrange a burger on top and then dollop on some of the cherry sauce. Add a few leaves of lettuce, slice and serve!
