Tiny Colorful Potatoes
From Dorothy McNett's recipes at www.dorothymcnett.com. When these baby potatoes in various colors (yellow, purple, gold, red) are available, snatch them up! They can be boiled, steamed, baked, grilled or microwaved to perfect doneness. Serve with burgers instead of French fries!
3-4 cups baby potatoes
Wash the potatoes well. Place in a glass or ceramic batter bowl. Sprinkle with oil and seasonings. Microwave 4-5 minutes, or until tender when pierced with a fork. Stir to coat with seasonings, adding more if needed. Or, another favorite method for cooking is to place the washed potatoes in a single layer on a baking sheet with sides. Sprinkle with oil and seasonings and bake at 350 degrees for about 15-25 minutes or until lightly browned and tender.
