Layer Cake Frosting
From Dorothy McNett's recipes at www.dorothymcnett.com. Change this every time you make it by using a different liquid such as milk for a simple taste, hemp or almond milk for a nice subtle flavor, or Irish Cream or sherry, or port, or..... this makes enough to frost the center, top and sides of a 2 layer cake, or top and sides of a 9 X 13 one.
1 cup unsalted butter, softened
Have butter at room temperature or soften in microwave for 30 seconds on half power. Do not have it melted, it needs to be soft and fluffy. Using a food processor or electric beater, whip the butter until it is light and smooth. Add remaining ingredients and beat until fluffy. Use as desired.
