Anchovy Stuffed Eggs

From Dorothy McNett's recipes at As someone from France once stated, perhaps this is why they became "Deviled Eggs"!

6 hard cooked eggs
1/4 - 1/3 cup good quality mayonnaise
a few grindings of pepper
2-3 tablespoons chopped anchovy fillets
diced red pepper or pimiento

Cook eggs, peel and allow to cool. Slice each in half lengthwise. Blend egg yolks, mayonnaise, pepper and anchovy pieces. Stuff into egg whites and garnish with a little red pepper. If desired and you have some left-over anchovies, arrange a thin slice over the top of each egg.
