Rhubarb Pudding

From Dorothy McNett's recipes at www.dorothymcnett.com.

4-5 stalks rhubarb
3/4 cup sugar

1 cup heavy cream, whipped
1/4 cup sugar
1 teaspoon vanilla

Wash and cut the rhubarb into 1 inch pieces. Combine rhubarb and sugar in batter bowl. Cover loosely with a plate or lid. cook in microwave for 5 minutes. Stir and cook another 1-2 minutes. Set aside to cool. When cool and ready to serve, whip the cream with the sugar and vanilla. Fold into the rhubarb and scoop into beautiful serving bowls. Usually served with a sweet cookie on the side.
