Dill and Horseradish Sauce

From Dorothy McNett's recipes at www.dorothymcnett.com. This is great with smoked fish, especially salmon.

1/2 cup heavy whipping cream, natural and organic is best
1/3 cup prepared horseradish
1/2 teaspoon apple cider vinegar
2-3 teaspoons snipped fresh dill, or about 1/2 teaspoon or more of dried dill
salt and pepper, as desired

Pour cream into a bowl or 2 cup size measuring cup. Whisk it well to whip it nice and fluffy, but not too stiff. Slowly and carefully blend in the remaining ingredients. It can be used immediately, but if it is chilled a few hours or overnight, it will thicken a bit.
