Mango Sauce with Prawns

From Dorothy McNett's recipes at www.dorothymcnett.com. This sauce is good with any shrimp, prawns, scallops, crab cakes, etc. A second mango could be peeled and sliced to serve with the cooked prawns on the baby greens, if desired.

1 mango
1/2 cup good quality mayonnaise
1 teaspoon salted capers
1/2 teaspoon horseradish
1/2 teaspoon dried tarragon
2-3 sprigs fresh parsley, finely snipped

8-12 fresh large prawns
1/2 teaspoon olive oil
sea salt
pepper
baby greens for serving

Peel and remove the pit from the mango. Dice the flesh and put into a bowl. Stir and mash the pulp as much as possible. Add remaining ingredients, tasting and adjusting the seasonings. Some recipes call for a bit of hot pepper or sauce, as desired. Set aside. Peel and devein the prawns. In a heavy bottomed saute pan, heat a bit of oil and cook the prawns several minutes, stirring constantly until they curl a bit and turn pinkish. Do not over cook! Sprinkle with salt and pepper. Arrange over greens and serve with the sauce.
