Loaf Pan Dinner

From Dorothy McNett's recipes at www.dorothymcnett.com. A version of old-fashioned meat loaf with two choices for cooking, the oven or the microwave oven. Throw this together using ground meat, chicken, or turkey and fresh vegetables. Baked in the oven it will brown on top and be firm enough to slice. Baked in the microwave oven it will be softer and more scoopable and delicious served on top of crispy taco shells, etc.

2 slices whole grain bread or rolls
1 onion, any variety
4-5 cloves garlic
1 medium sized red or green pepper, or 1 medium carrot, parsnip etc.
1/2 cup barbecue sauce, salsa or tomato sauce
1 pound (approximately) ground meat or poultry, or a combination
1/2 teaspoon sea salt
1/4 - 1/2 teaspoon freshly ground pepper
1/2 teaspoon dried herbs, such as basil, thyme, tarragon or a mixture
paprika for sprinkling

In food processor with steel chopping blade in place chop the bread, onion, garlic and vegetables to make a finely diced mixture. Dump into a bowl and add the sauce, ground meat or poultry, salt, pepper and herbs. Mix well. Lightly oil a loaf pan (approximately 9 by 5 inches) and spread the mixture evenly and sprinkle top with paprika.
For oven: Preheat oven to 375 degrees. Bake 40-50 minutes, or until meat is done and top is nicely browned.
For microwave: Use a glass or ceramic loaf dish or bowl, making sure it will fit into your oven. Cook 10-15 minutes on full power, uncovered.
