Fresh Albacore Tuna Sandwiches

From Dorothy McNett's recipes at www.dorothymcnett.com. I bet I can sear fresh tuna almost as fast as you could open a can of tuna! And, what a wonderful sandwich this does make! Or, if you prefer simply serve the tuna with some good quality crispy tostada chips, etc. Serve with lots of salad greens.

fresh tuna steak or steaks, about 1/2 inch thick
drizzles of soy sauce
sprinkles of freshly ground pepper
drizzles of oil (grapeseed, safflower, olive...)
sandwich buns or slices of whole wheat grain bread
mayonnaise
greens
sliced fresh ripe tomatoes or a ripe pear
semi-coarse sea salt

Slice the tuna if it is thicker than about 1/2 inch. Drizzle with some soy sauce and sprinkle with pepper. Heat a heavy bottomed frypan or saute pan, adding a little oil. (If you have one of the garlic infused oils, this is a perfect time to use it!) Sear the tuna on one side for about 2 minutes, turn over and sear the second side about 1-2 minutes, or until nicely browned and done to your liking. Spread buns or bread with mayonnaise, arrange the tuna slices (or dice the tuna up a bit if desired) over the mayo, top with greens and s sliced tomato or sliced pear. Sprinkle with a bit of semi-coarse sea salt. Cut into half, serve!
