Curtido, Central California Style

From Dorothy McNett's recipes at www.dorothymcnett.com. This is a great salad, or use as a side dish to Pupusas for a tasty appetizer with California wines.

1/2 cabbage, shredded
1 carrot, grated
4 cups boiling water

3 green onions, diced
1/4 cup white vinegar
1/4 cup apple cider vinegar
1/2 cup water
1 jalapeno, minced
1/2 teaspoon fine sea salt

Place grated cabbage and carrot into a large bowl or pan. Pour over the boiling water and allow to stand 5 minutes. Pour through a colander to drain and place in a large bowl, adding remaining ingredients. Allow to stand a few hours to cool, or refrigerate overnight.
