Tapioca and Fresh Fruits

From Dorothy McNett's recipes at www.dorothymcnett.com. Serve with fresh berries or whatever is in season.

1/2 cup pearl tapioca
water to cover

1 cup coconut milk
1/2 cup raw sugar
3 eggs, beaten
1/2 cup or more water, if needed

1-2 cups sliced fresh fruits, as desired
2-3 tablespoons sweet wine or Marsala, or Japanese plum wine
crystalline candied ginger

In glass or ceramic batter bowl, soak tapioca and water to cover for about 1 hour. After it has soaked, do not drain but add coconut milk, sugar, and eggs. Cook in microwave 1 minute. Stir. Cover with a glass or ceramic plate or lid. Cook on half power (power level 5) 12 min. - 15 minutes, or until thickened, adding more water if necessary to cook tapioca. Cool. In meantime, slice fruits as necessary, place in a bowl. Sprinkle with the sweet wine and allow to stand about 15 minutes or more. Place the cooled tapioca into dessert bowls, top with the marinated fruit and sprinkles of candied ginger.
