Pupusas ala Tres Pinos

From Dorothy McNett's recipes at www.dorothymcnett.com. Use any filling of choice, such as cooked meat, chicken, etc. or keep it simple with good quality cheese. Serve with Curtido sauce.

2 cups masa harina
1 tablespoon ground cumin
1/4 teaspoon fine sea salt
a few grindings of pepper
1 1/2 cups warm water
8 oz. cheddar, jack, or other cheeses, grated
finely chopped cilantro, about 1/3 cup or so
oil or butter for frying

In batter bowl, combine masa harina, cumin, salt and pepper. Add the warm water, blending well to make a soft dough that is neither too dry nor too sticky. (add a bit more masa harina or water, if necessary) Shape about 1/2 cup of the dough into balls, then flatten them with your hands, making about 3 inch rounds of dough. Put some grated cheese and cilantro in the center of each ball and then work the edges up over the filling and form into a ball, encasing the filling. Flatten to 1/4 inch thickness. Heat a flat griddle pan or large saute pan, brushing with a bit of oil or butter. Fry the pupusas 2-3 minutes on each side, or until lightly browned. Serve warm with curtido or other sauces as desired.
