From Dorothy McNett's recipes at www.dorothymcnett.com. Use any filling of choice, such as cooked meat, chicken, etc. or keep it simple with good quality cheese. Serve with Curtido sauce.
2 cups masa harina
In batter bowl, combine masa harina, cumin, salt and pepper. Add the warm water, blending well to make a soft dough that is neither too dry nor too sticky. (add a bit more masa harina or water, if necessary) Shape about 1/2 cup of the dough into balls, then flatten them with your hands, making about 3 inch rounds of dough. Put some grated cheese and cilantro in the center of each ball and then work the edges up over the filling and form into a ball, encasing the filling. Flatten to 1/4 inch thickness. Heat a flat griddle pan or large saute pan, brushing with a bit of oil or butter. Fry the pupusas 2-3 minutes on each side, or until lightly browned. Serve warm with pineapple salsa, or other sauces as desired.
