El Salvador Ceviche de Camarones

From Dorothy McNett's recipes at www.dorothymcnett.com. I got a suggestion for cooking the shrimp in beer from someone who had been in El Salvador recently. This is really good! Make it, keep it refrigerated and ready to serve.

2 pounds large shrimp. peeled and deveined
1 bottle or can of beer, your choice of brand
1/2 cup chopped red onion
2-3 tablespoons chopped fresh cilantro
2-3 tablespoons chopped fresh parsley
1-2 cloves garlic, chopped
1/2 cup fresh lime juice
1 cup good quality catsup
1/4 teaspoon Tabasco sauce
1 tablespoon extra virgin olive oil
salt and pepper, as desired

In saute pan heat the beer until steaming hot. Add the prawns, cover, and cook about 2-3 minutes or until they turn pink and are done but do not overcook. Drain and place prawns in a bowl. Add the remaining ingredients, adjusting seasonings as desired. Chill and serve over lettuce leaves.
