Tomato Coulis Salad

From Dorothy McNett's recipes at This is a wonderful sauce to use as a garnish or drizzle over fresh greens for a salad. I love it with smoked salmon. Only make this when tomatoes are fresh and good!

3-4 fresh nice ripe tomatoes
1 teaspoon rice wine vinegar, or lemon juice
1/4 teaspoon dried tarragon, or several fresh tarragon leaves
2-3 tablespoons extra virgin olive oil

lots of fresh local greens
smoked salmon, or whatever you choose
sea salt, as desired

Remove the stem end and core from tomatoes. Quarter them and then whirl them in food processor to puree. Pour through a mesh strainer to remove seeds, if desired, but is not necessary to remove them. (Coulis is usually very smooth, with little texture.) Whisk the vinegar or lemon juice, tarragon and olive oil into the tomato puree. Drizzle sauce over serving plates and arrange the salmon or greens and serve. Or, toss everything together in a large salad bowl and serve! You may wish to sprinkle with a bit of coarse sea salt, as desired.
