Swiss Chard and Brats

From Dorothy McNett's recipes at This recipe title does not refer to kids who will not eat their greens, but to wonderful fresh Swiss chard steamed just a bit and served with grilled bratwurst or other sausages!

German, Austrian or Swiss style sausages (fully cooked)
1 bunch fresh Swiss chard
2 - 4 tablespoons extra virgin olive oil
1 teaspoon good quality red vinegar (balsamic, etc)
1/2 teaspoon grainy prepared mustard
sprinkles of semi-coarse sea salt

Slice the sausages slightly on an angle and brown a bit on a grill pan or in a skillet. Set aside. Wash chard carefully and then tear or cut into serving sized pieces, reserving one large leaf. Place cut up pieces in a glass or ceramic bowl, cover with the full sized piece of chard. Cook in microwave oven 1-2 minutes, or until it has steamed a bit but is still full of texture. Arrange chard and sausage slices on plates or large platter. In glass measuring cup, whisk the oil, vinegar and mustard and drizzle over. Sprinkle with just a few grains of salt and serve.
