Green Chili Pepper Burgers (or steak)

From Dorothy McNett's recipes at www.dorothymcnett.com. Instead of the ground beef ovals, you can use rib eye steaks. It is the sauce that makes this Santa Fe style! This makes 4 nice big burgers.

1 to 1 1/2 pounds lean ground chuck or round
1 tablespoon all purpose unbleached flour
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground pepper
2 tablespoons unsalted butter
1 tablespoon extra virgin olive oil

2 green onions, finely diced
2 green chilies, finely diced (canned or just roasted)
2 tablespoons finely diced fresh cilantro
1 tablespoon green peppercorns (whole)
1/2 cup white wine
1/2 cup heavy cream

warmed flour tortillas for serving
chopped fresh cilantro or parsley for garnish

Shape the ground beef into 4 thick oval patties. On a plate combine flour, salt and pepper and sprinkle over the patties. In heavy bottomed saute pan, heat the butter and olive oil until nice and hot but not smoking! Add the patties and cook about 2-3 minutes per side without flattening them with the spatula. Cook to your desired doneness and remove them to a platter. Add the green onions, chilies, and cilantro to the hot pan (adding a bit more oil if necessary) and cook about 30 seconds. Add the whole peppercorns and white wine. Cook over high heat, stirring with silicone spatula in a figure 8 pattern until mixture has reduced by about half. Add the cream and stir to blend but do not let it boil. Pour over the burgers. Garnish with cilantro or parsley and serve with warmed tortillas.
