New Mexican Corn Fries

From Dorothy McNett's recipes at www.dorothymcnett.com. A great appetizer or side dish.

2 ears fresh corn on the cob (uncooked) or 1 cup frozen
2 eggs
6 tablespoons all purpose unbleached flour
1/2 teaspoon baking powder
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper
1/4 teaspoon, or more cayenne or other hot spice, as desired
3 - 4 tablespoons butter or oil for frying
dollops of sour cream
1/2 cup pine nuts

Scrape the corn from the cobs and measure out 1 cup. In batter bowl whisk the eggs well and then blend in the corn, flour, baking powder, salt, pepper and cayenne. In a heavy bottomed skillet or saute pan, heat the butter or oil. Drop the mixture by 1 tablespoon amounts into hot pan. When brown, turn and cook second side. Arrange on a platter and dollop on some sour cream and sprinkle with pine nuts.
