Elderberry Salad Dressing or Dip

From Dorothy McNett's recipes at www.dorothymcnett.com. Natural elderberry concentrate is available in natural food stores and is a fabulous "cough medicine". Also use it to make a delicious salad dressing to pour over fresh greens of all kinds. It is an interesting dip or sauce for beef steaks and roasts, cooked prawns, crawdads, smoked salmon or tuna, etc!.

1/4 cup extra-virgin olive oil
3 tablespoons elderberry concentrate
2-3 cloves garlic, finely minced
1/4 - 1/2 teaspoon fine sea salt
freshly ground pepper
fresh greens (romaine makes a great dipper)

In a glass measuring cup whisk the olive oil, elderberry concentrate, garlic, salt and pepper to make the dressing. Place greens into a beautiful salad bowl and toss with the dressing. Or arrange slices of grilled or roated beef, prawns or crawdads, smoked salmon or tuna and baby romaine leaves on a platter. Pour the dressing into small bowl, dip and enjoy!
