Elderberry Salad Dressing or Dip

From Dorothy McNett's recipes at www.dorothymcnett.com. Natural elderberry concentrate is available in natural food stores and is a fabulous "cough medicine". Also use it to make a delicious salad dressing to pour over fresh greens of all kinds. It is an interesting dip or sauce for smoked salmon or tuna.

1/4 extra-virgin olive oil
3 tablespoons elderberry concentrate
2-3 cloves garlic, finely minced
1/4 - 1/2 teaspoon fine sea salt
freshly ground pepper
fresh greens (romaine makes a great dipper)
smoked salmon or tuna, as desired

In a glass measuring cup whisk the olive oil, elderberry concentrate, garlic, salt and pepper to make the dressing. Place greens into a beautiful salad bowl and toss with the dressing. Or, arrange finger food shapes of smoked salmon or tuna and baby romaine leaves on a platter. Pour the dressing into small bowl, dip and enjoy!
