Natural elderberry concentrate is available in natural food stores and is a fabulous "cough medicine". Also use it to make a delicious salad dressing to pour over fresh greens of all kinds. It is an interesting dip or sauce for smoked salmon or tuna. 1/4 extra-virgin olive oil In a glass measuring cup whisk the olive oil, elderberry concentrate, garlic, salt and pepper to make the dressing. Place greens into a beautiful salad bowl and toss with the dressing. Or, arrange finger food shapes of smoked salmon or tuna and baby romaine leaves on a platter.
