Sweet Potato or Yam Parfait
From Dorothy McNett's recipes at www.dorothymcnett.com. Makes about 6-8 parfaits, tastes a bit like a sweet potato pie but is easier and faster to make!
2 medium sized sweet potatoes (to yield 1 1/2 cups mashed)
3/4 cup crystalline brown sugar
2 tablespoons molasses or sorghum
1 1/4 cups milk or half and half
1 teaspoon pure vanilla extract
1/4 teaspoon fine sea salt
1/2 teaspoon cinnamon
1/2 teaspoon powdered ginger
1/2 - 1 cup gingersnap crumbs (or biscotti crumbs)
whipped cream, if desired
Wash and scrub the sweet potatoes. Cut into quarters and place in a glass or ceramic batter bowl. Cover. Cook in microwave 6 minutes. Test to see if they pierce easily with a fork, adding 2-3 minutes more if needed. Allow to cool, remove the peelings, and mash or puree them. Measure out about 1 1/2 cups and set aside.
In batter bowl, whisk the eggs very well. Whisk in the sugar, molasses, milk, vanilla, salt, cinnamon, ginger and the mashed sweet potato. Blend very well. Microwave 2 minutes. Whisk well. Repeat for another 2 minutes, whisk well. Repeat at 1 minute intervals, whisking well each time, until the pudding has set and is smooth. Allow to cool slightly and then layer the pudding with the cookie crumbs in individual sherbet or wine glasses. Cool completely. When ready to serve, garnish with whipped cream and fresh berries.
