Sole or Cod with Cheese and Tomato Sauce

From Dorothy McNett's recipes at This is really good with red snapper or rock cod, or other "softer" style fish such as Petrale Sole as you do not need to turn it over halfway, etc. And, it is easy to cook just one fillet, if desired.

1 pound fish fillets (about 2 large fillets)
2 tablespoons finely chopped onion (shallot)
1 teaspoon lemon juice
1/8 teaspoon pepper
small pinch of fine sea salt
1 medium tomato finely chopped
1/4 - 1/2 cup shredded Swiss or Gouda cheese

Arrange fish in shallow glass or ceramic baking dish, such as a glass pie dish, with larger pieces at outer edges and smaller pieces in center. Sprinkle with onion, lemon juice, pepper and salt. Top with tomato and cheese. Cook, using microwave, 4-5 minutes, until fish is firm but flakes easily when tested with a fork. Do not overcook. Or, arrange everything the same way in a heavy bottomed skillet and bake in preheated 375 degree oven until fish is done, about 10 - 12 minutes.
