Flavorful Quick Bread

From Dorothy McNett's recipes at www.dorothymcnett.com. It still takes about 1 hour to bake, but the mixing is quick and easy! Bake this while making a vegetable soup or stew, a perfect companion.

2 1/2 cups all purpose unbleached flour
2 tablespoons baking powder
2 tablespoons crystalline brown sugar (sugar in the Raw)
1 teaspoon semi-coarse sea salt
1 few grindings of pepper
2 eggs
1/3 cup extra virgin olive oil
2/3 cup milk
1 1/2 cups pitted brine cured olives, such as black kalamata
1/2 onion, finely chopped (about 1/2 cup)
2-3 cloves garlic, finely chopped

Preheat oven to 350 degrees. Lightly brush some olive oil over bottom and half way up the sides of a loaf pan about 8 by 4 inches in size. Set aside. In batter bowl, whisk together the flour, baking powder, sugar, salt and pepper. In another bowl whisk the eggs, oil and milk to blend well. Add to flour mixture along with the olives, onion and garlic. Blend well to get the dry ingredients mixed in but do not over mix. It will be lumpy. Turn the mixture into the oiled pan and bake 50-60 minutes or until nicely browned. Cool on a rack about 10 minutes, then invert and remove from pan. Slice and serve!
