Warm Cake Sauce
From Dorothy McNett's recipes at www.dorothymcnett.com. Use this over Pumpkin Cupcakes for a non-traditional Thanksgiving pumpkin dessert!
1/4 cup unsalted butter
Melt the butter 30 seconds in microwave. Set aside. In batter bowl combine hot water and brown sugar. Stir to start the sugar to dissolve a bit, adding the warm butter. Whisk in the egg to blend it in very well. Whisk in salt, vinegar and vanilla. Cook 2 minutes, whisk well. Cook another 2 minutes, whisk well. Mixture should be hot and slightly thickened. You may need to cook an additional 1-2 minutes, but do not let it boil. Serve hot, warm, or cold!
