This is an "open-ended" recipe which means you will adjust the amount of cheese and other ingredients so that the mixture can be shaped into a ball and then decorated to resemble an apple. A combination of cheeses is a great idea, as well. 1 - 2 cups shredded cheese, such as Cheddar, Cotswald, Jack... Grate the cheese finely, using your food processor or a grater. Combine cheese, mayonnaise, mustard, berries and pistachios. Shape into a ball, adding enough cheese or mayonnaise to hold it together. Place on serving platter, sprinkle with paprika and then tuck the clove into the top and arrange the bay leaf to resemble an apple with stem and leaf. Sprinkle with more diced berries and nuts.
