Appetizer Spiced Nuts

From Dorothy McNett's recipes at www.dorothymcnett.com. Use any combination of nuts as desired. Most people love a combination of almonds, pecans and walnuts but it can be made with only one variety such as pecans. This is so much easier to make using your microwave oven instead of cooking it in a pan on the burner, just make sure the bowl you use is suitable for high temperatures, such as the Anchor Hocking glass 8 cup batter bowl. This can also be made in a heavy bottomed saucepan on the burner following the basic directions and cooking and stirring until nuts have caramelized.

1/3 cup crystalline brown sugar (raw sugar)
1/4 teaspoon each cinnamon, allspice and nutmeg
1/4 - 1/2 teaspoon dried red chili powder or pepper (as desired)
1/2 teaspoon sea salt
2 tablespoons water
2 cups nuts (such as almonds, pecans, walnuts...)

In glass batter bowl combine sugar, spices and water. Cook 1 minute and stir, using a silicone spatula. Cook 2 minutes and stir well. Mixture should be boiling and sugar dissolved. If not, cook for 1 minute more. Add the nuts and stir well. Cook for 2 minutes, stir, and cook for another 2 minutes. Stir. Continue to cook for another 2 minutes, or until the nuts have caramelized but just before burning! Pour quickly onto a silicone or parchment lined baking sheet and allow to cool.
