Fish with Mushrooms

From Dorothy McNett's recipes at Use any fresh local fish, as available! Serve over a bed of local fresh greens and drizzle with extra virgin olive oil. Or, and don't forget to sprinkle with just a bit of semi-coarse sea salt!

1 cup sliced fresh mushrooms, or 2-3 dried wild mushrooms, soaked
1/4 cup sliced green onions
1 pound fresh fish, such as sea bass, snapper, halibut
1/4 teaspoon fine sea salt
1/4 teaspoon freshly ground pepper
1-2 tablespoons white wine, sherry, or orange juice
1/2 teaspoon dried marjoram
2 teaspoons lemon juice, plus some of the zest
1/4 cup grated Emmenthaler or other cheese
1/4 cup crushed crackers or bread sticks
paprika for garnish
semi-coarse sea salt

Sprinkle mushrooms and onions in bottom of flat baking dish (ceramic quiche dish is pretty). Cover with waxed paper. Cook in microwave on high 3 minutes. Arrange fish over vegetables, sprinkle with salt, pepper, wine, marjoram and lemon juice and zest. Cover loosely with waxed paper. Cook in microwave on full power 4-5 minutes, or until fish flakes easily. Sprinkle with cheese and cracker crumbs, reheating 1 minute, if needed. Sprinkle with paprika and interesting sea salt.
