Fried Peanut Butter and Banana Sandwiches

From Dorothy McNett's recipes at www.dorothymcnett.com. This of course is Elvis Presley's famous and favorite sandwich. I would rather use the word Grilled instead of Fried as then more people are likely to try making it! Same thing, different wording!

slices of bread
soft, very ripe banana
creamy peanut butter
butter for spreading

Mash the banana and then spread some on one bread slice. Spread the other slice with peanut butter and put the two pieces together as a sandwich. Spread butter over both sides. Heat a heavy bottomed frypan or saute pan over high heat, turn down to medium high and grill (fry) until browned on one side. Turn and brown the second side. Slice and serve. Eat only one, not 8-10 as it has been written that Elvis sometimes would consume in one day. Rock away!
