Crab or Smoked Salmon Appetizers

From Dorothy McNett's recipes at www.dorothymcnett.com. Use any cooked firm fish that will dice easily without becoming mushy, with crab or salmon always being the favorite!

about 1 cup diced cooked crab or smoked salmon
about 2 cups mild cheddar or fontina cheese, shredded
3-4 green onions, thinly sliced
8 flour tortillas
about 2 tablespoons extra virgin olive oil (garlic infused is fabulous here!)

Preheat oven to 450 degrees. In batter bowl, combine diced crab or salmon, cheese and onions. Arrange four of the tortillas onto baking sheet. Brush with some of the olive oil. Evenly cover each with the crab mixture, bringing it to within 1/2 inch of the edge. cover with the remaining tortillas and press them down a little but do not squish out the filling. Spread tops with a bit more olive oil. Bake about 8 minutes, or until lightly browned. When done, slide them onto a cutting board and cut each into 6 wedges. Arrange on a beautiful platter and serve!
