Main Dish Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. Nothing is easier for a busy person to be able to create a tasty and nutritious main dish salad by using ingredients on hand in the refrigerator or cupboard. Try for all of the foods groups, using fresh greens, vegetables, fruits, dried fruits, nuts and seeds, already cooked poultry or meat or fish, good quality canned beans of many varieties available, diced or grated cheeses, cooked rice or pasta, some crackers or bread sticks...and ALWAYS MAKE YOUR OWN DRESSING!

fresh spinach leaves, washed and dried (or other greens of choice)
diced or shredded carrot
3-4 red radishes, sliced or diced
cooked vegetables such as baby potatoes, fingerlings, etc.
diced or sliced cooked meats, chicken, fish...as desired
handful of drained cooked beans such as garbanzos
1-2 oranges, peeled and sliced
1-2 avocados, peeled and sliced
4-6 tablespoons extra virgin olive oil
2-3 tablespoons balsamic or other vinegar, more or less
1 teaspoon honey or sugar
zest of fresh orange
sea salt and freshly ground pepper, as desired

Either arrange the greens and sliced or diced vegetables, fruits, nuts, meat, beans, etc on individual salad plate or toss everything together in a nice salad bowl. In a glass measuring cup, using a fork or a small whisk, mix olive oil, vinegar, honey and zest to blend. Feel free to add other herbs and seasonings, as desired. Drizzle dressing over and enjoy!
