Beef and Quinoa Patties with Green Beans

From Dorothy McNett's recipes at www.dorothymcnett.com. A very open-ended recipe (guide) so that you can adjust the seasonings and quantities as desired. If you have cooked quinoa from another use and have some leftover, it adds a great texture to this. If not, then use some fine cornmeal or oatmeal or other grains instead of the quinoa.

3/4 pound lean ground beef, or other ground meats as desired
sea salt
freshly ground pepper
2 tablespoons salsa, catsup, or horseradish sauce, etc...
1/4 cup cooked quinoa, plus a bit more for sprinkling
oil or butter for the pan
1/2 - 3/4 pound fresh green beans
2 - 3 tablespoons water
salt and pepper as desired
mayonnaise or salsa, or both! for serving

Combine meat, salt, pepper, salsa or catsup or sauce with the cooked quinoa and shape into patties. Sprinkle a little bit more quinoa over patties. Heat heavy bottomed frypan or saute pan, adding 1-2 tablespoons oil or butter as needed. Cook 1-2 minutes, turn patties and cook 1-2 minutes more or to your desired doneness. In meantime, wash and remove the stem ends from the green beans. Put the water in a skillet with a lid and bring to a boil. Quckly add the green beans, cover, and cook 2 - 3 minutes. Do not overcook!!! Remove the green beans to a plate and sprinkle with salt and pepper. Serve with the patties with mayo or salsa, or both for dipping and dressing!
