Strip Salad

From Dorothy McNett's recipes at Also known as KISS salad, or just keep it simple!

1-2 carrots
1-2 zucchini
1-2 red bell peppers
semi-firm cheese such as Monterey Jack, etc. (Norwegian Gjetost is fab!)
1/4 cup extra virgin olive oil
2 tablespoons apple cider vinegar
1 - 2 cloves garlic, minced
pinch of dried dill, or 1 - 2 teaspoons snipped fresh
sea salt

Wash vegetables very well. Using a julienne peeler or a nice sharp knife, slice each into strips. Cut the cheese into similar sized strips. Toss together. In glass measuring cup, whisk the oil, vinegar, garlic, dill, salt and pepper and toss over the salad and serve.
