Otherwise, with a sharp pointed knife, cut a few free form hearts out of the cheese. cheddar cheese, semi-firm Cut the cheese into heart shapes, using a small cookie cutter or with a sharp knife in free form. Don't worry if it is too hard to do, just make squares and proceed. Melt the dark chocolate chips in a glass measuring cup for 30 seconds, stir, and microwave 30 seconds more if needed to finish the melting. With a spoon, dip each heart into the chocolate and place on a silicone mat or parchment paper. Sprinkle with a bit of the dried chili pepper and allow to harden.
