Stilton and Naan Nibbles
From Dorothy McNett's recipes at www.dorothymcnett.com. What a great tasting and simple party food. It is equally good made on the spot and served hot out of the oven, or even room temperature the following day! Edward Lear traveled to India and Ceylon and loved cheeses like this.
1 package (two flat breads) Indian naan
Preheat oven to 400 degrees. Line a baking sheet with silicone baking mat or parchment paper. Using a bread knife, slice the naan into strips about 1-2 inches wide, and then cut into squares or rectangles. Gently open each slice and tuck a bit of the blue cheese between the layers and press down to secure. Place on baking pan, leaving about 1/2 inch or so between each piece. Bake about 5 minutes, or until cheese is bubbly and melted and the bread is browning a bit. Cool slightly, arrange on a beautiful platter and serve.
