Almond Dessert

From Dorothy McNett's recipes at www.dorothymcnett.com. Makes about 4-6 servings, and is easy to double if needing to make more!

1 envelope unflavored gelatin
1/2 cup water
1 1/2 cups almond milk (or use half and half)
1/2 cup sugar
1/4 - 1/2 teaspoon almond extract
1 teaspoon pure vanilla extract

fresh mandarin orange segments
canned lichee nuts and/or other fruits as desired

Soften gelatin in water. Heat almond milk or half and half, sugar, and extracts but do not let it boil. Stir to dissolve sugar, adding the softened gelatin mixture. Pour into 8 by 8 inch baking dish or other similar size, and refrigerate until set up. Cut into diamond or rectangle shapes and place on serving plates. Garnish with fruits.
