Date and Pecan Baked Pudding

From Dorothy McNett's recipes at www.dorothymcnett.com. Not really a pudding, but a baked dessert to slice and serve. It is a version of a great tasting date bar. Add some nutritious hemp or sesame seeds along with the nuts as well.

3 eggs
1 cup crystalline brown sugar (raw sugar)
1/4 cup all purpose unbleached flour
1 teaspoon baking powder
1/4 teaspoon fine sea salt
2 1/2 cups (about 12 oz. or so) dates, chopped
1 cup pecans, chopped

Preheat oven to 350 degrees. In batter bowl, beat eggs until light and fluffy using electric beater or a good whisk. Beat in the sugar. Using a spatula or spoon, add the flour, baking powder and salt. Stir in the dates and pecans. Lightly brush some olive oil over bottom and sides of a 9 inch baking pan. Spread the batter into the oiled pan. Bake 25-30 minutes or until golden brown. Serve warm or cold, with or without ice cream and fresh fruits.
