Italian Shrimp Sauté

1/4 cup unsalted butter
2-3 cloves garlic, minced or pressed
2 tablespoons lemon juice
1 pound large shrimp or prawns, peeled and deveined
1/4 teaspoon coarse sea salt
1/8 teaspoon pepper
2 tablespoons chopped parsley

Put butter, garlic and lemon juice in a medium-sized casserole or baking dish. Microwave, uncovered, on High 45 seconds, until butter melts. Lightly mix in shrimp. Microwave, uncovered, on High 2-3 minutes. Stir gently; shrimp should be pink and tender. If necessary, return to microwave oven and cook as much as 1 minute longer. Mix in salt, pepper and parsley. Makes about 3 servings.
