Fava Bean Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. Get to the Farmer's Market for some fresh fava beans!

1/2 - 1 cup shelled fava beans
lettuce, as desired
1/2 cup snipped fresh Italian parsley
small slices or cubes of sheep or goat cheese
1/4 cup extra virgin olive oil
zest of a lemon
juce of half the lemon
1/4 teaspoon sea salt
freshly ground pepper
1/2 teaspoon dried herbs (herbs d Provence)

Shell the fava beans. Bring about 2 cups water to a boil in a saucepan. Drop the shelled beans into the boiling water and cook for 30 seconds. Drain. Allow to cool. When ready to serve, place lettuce, parsley, cheese and fava beans in salad bowl. In glass measuring cup, whisk the oil, zest, juice, salt, pepper and herbs. Pour over salad, toss and serve.
