Green garlic is the springtime garlic, harvested before it matures into the garlic bulbs we know so much about. It looks like scallions. Use the green tops as well as the bulb, slicing it as if you were slicing large green onions. 4-5 stalks green garlic Wash, trim away any browned and wilted stems from the garlic. Slice slightly at an angle into about 1/2 inch pieces. Heat heavy bottomed saute pan, adding butter or oil. Add the sliced garlic and cook and stir several minutes. It can start to brown a bit, but not much. Whisk in the flour, salt and pepper. Whisk in the broth and bring to a boil, stirring constantly. Taste, adding more salt and pepper if needed.
