Lettuce Drizzle for Camembert de Chevre
From Dorothy McNett's recipes at www.dorothymcnett.com. This is a great way to use that head of leaf lettuce that is starting to wilt a bit! Whirl, season, and pour over any soft spreadable cheese, or use as a salad dressing. For Valentine's Day, just say "Let...Us Drizzle a Bit!"
2-3 cloves garlic
In food processor with steel chopping blade in place, whirl the garlic and shallot to chop finely. Add the lettuce leaves and pulse to get it blended smoothly, adding salt and pepper. With motor running, slowly drizzle in the oil. Place the cheese on a beautiful platter, drizzle with dressing. Great with bread slices, crackers, etc.
