Potato and Cucumber Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. A great combination of potatoes and cucumbers for a refreshing summer salad.

5-6 small new potatoes
1/3 - 1/2 cup good quality mayonnaise
1-2 tablespoons sour cream or yogurt
1/4 cup chopped fresh chives
1/2 teaspoon sea salt
freshly ground pepper
1 small cucumber, diced (about 1 cup)
1 small red onion, sliced thinly

Wash potatoes well but do not peel. Cook until tender. (3-5 minutes in a covered glass or ceramic dish in the microwave is the best method to retain the flavors, color, and nutrients.) Allow to cool. Cut into small pieces. In serving bowl, combine remaining ingredients and toss in the potatoes.
