Mixed Burgers with Stuffing

From Dorothy McNett's recipes at www.dorothymcnett.com. Makes 4 double layer burgers, adjust recipe for more or less servings! Sometimes the stuffing drips out a bit during cooking, no problem. Just try not to push down on the patties while cooking to help maintain the nice filling intact.

1/2 pound ground beef or pork
1/2 pound ground chicken
1/2 teaspoon sea salt
freshly ground pepper
1 carrot, grated (about 1/3 cup)
1/4 cup raisins or currants
1/4 cup sunflower seeds
olive oil
alfalfa sprouts or baby greens. or both
relish or salsa or chutney for topping
hamburger buns or other bread, as desired

In bowl combine ground beef or pork, chicken, salt and pepper. Shape into 8 thin patties. In another bowl, combine carrots, raisins, and sunflower seeds. Evenly spoon onto the centers of 4 of the patties. Cover with the remaining patties and seal the edges carefully with your fingertips. Brush each with a little bit of oil. Preheat heavy bottomed saute pan or a stove top grill pan. Cook patties 2-3 minutes, or more, per side or until nicely browned and meat is done, using medium to medium high heat and adding more oil if needed. Place patties on rolls, cover with sprouts or greens, dollop with some relish or chutney.
