Melon Salad

From Dorothy McNett's recipes at www.dorothymcnett.com. Use a variety of melon, if available.

1 small melon, such as honeydew, cantaloupe...
1 summer sweet onion, such as Vidalia, Walla Walla, Maui...
1/4 cup extra virgin olive oil
1 tablespoon wine vinegar
1/4 teaspoon semi-coarse sea salt
1/4 teaspoon fennel seeds or paprika
freshly ground pepper
1/2 cup port wine or sherry

Wash the melon. Dry. Slice in half and remove the seeds. Slice into 8 wedges, remove the peeling. Cut into small pieces and place in salad bowl. Dice the onion and add to the melon. In glass measuring cup, whisk together the remaining ingredients to make the dressing. Pour over melon and onions and serve, or refrigerate several hours.
